Basil Cornmeal Pancakes

A yummy breakfast recipe that combines the unique ingredients of basil and cornmeal. My kids beg me to make this recipe every week!

Ingredients

  • 1 ½ cup flour
  • 1 cup yellow cornmeal
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • ¾ tsp salt
  • cup oat milk
  • 3 tsp lemon juice
  • 3 eggs
  • ¼ cup honey
  • ¼ cup olive oil
  • 1 cup basil leaves washed

Instructions

  • Add all of the wet ingredients to the blender. Add all of the dry ingredients. Add the basil. Blend the ingredients together.
  • Heat a non-stick pan on the stove. When the pan is hot, spoon about ¼ cup of batter onto the pan. Cook for 2-3 minutes until bubbles form on top, then flip your pancake and cook for an additional 1-2 minutes until golden brown on both sides.
  • Remove the pancake from the pan. Add more batter and cook more pancakes.
  • Serve with your favorite toppings, including syrup.
