Chocolate Chickpea Muffins

These chocolate chickpea muffins use canned chickpeas, cocoa powder, Greek yogurt, protein powder, chia seeds, and spinach for a chocolate muffin that's filling, moist, and packed with protein.

Ingredients

  • 4 large eggs
  • ½ cup maple syrup
  • 4 tbsp coconut oil softened
  • cup Greek yogurt plain
  • 1 cut fresh baby spinach packed
  • tsp vanilla extract
  • 6 tbsp cocoa or cacao powder
  • ½ cup oat flour
  • 2 scoops chocolate protein powder
  • 3 tbsp chia seeds
  • ½ tsp baking soda
  • ¾ tsp salt
  • 1 can chickpeas drained
  • ½ cup chocolate chips plus more to top

Instructions

  • Preheat the oven to 350°F. Line a 12-cup muffin pan with paper liners or lightly grease the cups.
  • Mix ingredients: Add all ingredients except the chocolate chips to a high-powered blender in the order your blender recommends, generally with the wet ingredients on the bottom and the dry ingredients on top. Blend until the batter is completely smooth, scraping down the sides as needed.
  • Stir in the chocolate chips. Fold in most of the chocolate chips by hand, reserving a few for the tops if you’d like.
  • Fill the muffin cups. Divide the batter evenly into a greased 12-cup muffin tin, filling each almost to the top. Sprinkle the remaining chocolate chips on top.
  • Bake for 25–27 minutes, or until the tops are set and a toothpick inserted in the center comes out clean. Larger muffins will take longer to bake.
  • Cool before serving. Let the muffins cool in the pan for about 10 minutes, then transfer them to a wire rack. They will continue to firm up as they cool.

Notes

Because these muffins contain chickpeas, Greek yogurt, and protein powder, I’d avoid overbaking them. They’ll stay softer and fudgier if you pull them once the centers are just set.
