No Bake Oatmeal Chocolate Chip Energy Bites

Ingredients

  • 2 cups old fashioned oats
  • 2 tbsp chia seeds
  • 1 tsp cinnamon
  • tsp nutmeg optional
  • tsp salt leave out if the nut butter has salt
  • ½ cup hemp hearts
  • ¼ cup flax seeds optional
  • 1 cup creamy nut butter ex: almond butter, peanut butter
  • ¼ cup honey
  • 2 tsp vanilla
  • ¾ cup chocolate chips regular or mini size
  • ¾ cup craisins chopped, optional

Instructions

  • In a bowl, mix together the oats, chia seeds, cinnamon, nutmeg, salt, hemp hearts, and flax seeds (if using) until well distributed.
  • Add the nut butter, honey, and vanilla to the bowl. Mix well.
  • Add the chocolate chips and craisins (if using). Mix until all ingredients are distributed and sticky. You may need to hand mix the ingredients at the end.
  • Form into golf-sized balls and place on a cookie sheet. Balls should be about 1½ inch in diameter.
  • Refrigerate for two hours to set. Remove from the tray. They can now be placed in a small bowl and should retain their shape. Keep refrigerated.

Notes

Optional ingredients include nutmeg, flax seed, and craisins or raisins.
If the dough does not stick together, mix in 1-2 tsp of water, as needed.
