Ingredients

  • 1 cup water (240g)
  • 2 tsp active dry yeast
  • 1 tbsp honey
  • 1 cup whole wheat flour (152g)
  • 1 ¾ cup all-purpose flour (238g)
  • 1 tsp salt
  • 1 tbsp olive oil

Instructions

Make the Dough

  • Make Sponge: Add Water, yeast, and honey to a large mixing bowl and stir till dissolved. Combine whole wheat flour, all-purpose flour, and salt in another mixing bowl. Take 2 large serving spoon-sized scoops of the flour mixture and add it to the wet ingredients, whisk to combine. Cover and set on the counter for 15 minutes.
  • Incorporate remaining ingredients: Add in olive oil and remaining flour mixture and stir until shaggy dough forms.
  • Work the Dough: Scrape bowl onto a clean floured work surface, knead for a few minutes until smooth ball forms, cover with a bowl, and let rest for 10 minutes. Knead the dough again for a few minutes and place in an oiled bowl, cover, and rest until the dough has doubled (1 hour).
  • Divide into balls: On floured work surface place your dough and divide it into quarters. Halve each quarter so you have 8 even-sized dough balls. Cover dough balls with plastic wrap or a clean dish towel.

Bake The Pitas

  • Pre-Heat Oven: Place a large cast iron pan, baking steel, or pizza stone in the bottom rack of your oven and preheat to 475°F.
  • Batch Bake: In batches of 1,2 or 3 (as many as will fit on your cooking surface), roll dough balls into 8-inch rounds. Transfer to a hot baking surface for 2 minutes, they should be puffed up like a ball. Flip and gently deflate with tongs and bake for 1 more minute. Transfer to a cloth-lined bowl so they stay soft and warm. Serve hot.
