Make Sponge: Add Water, yeast, and honey to a large mixing bowl and stir till dissolved. Combine whole wheat flour, all-purpose flour, and salt in another mixing bowl. Take 2 large serving spoon-sized scoops of the flour mixture and add it to the wet ingredients, whisk to combine. Cover and set on the counter for 15 minutes.
Incorporate remaining ingredients: Add in olive oil and remaining flour mixture and stir until shaggy dough forms.
Work the Dough: Scrape bowl onto a clean floured work surface, knead for a few minutes until smooth ball forms, cover with a bowl, and let rest for 10 minutes. Knead the dough again for a few minutes and place in an oiled bowl, cover, and rest until the dough has doubled (1 hour).
Divide into balls: On floured work surface place your dough and divide it into quarters. Halve each quarter so you have 8 even-sized dough balls. Cover dough balls with plastic wrap or a clean dish towel.
