  • 1 tbsp olive oil
  • 2 strips bacon diced
  • 4 cups chicken broth
  • 1 cup water
  • 3 cloves garlic diced
  • 1 medium onion diced
  • 1 tsp salt
  • 1 tsp cumin
  • ½ tsp coriander
  • ½ tsp smoked paprika
  • 1 tsp chipotle
  • ½ tsp black pepper
  • 1 tsp oregano
  • 1 lb pinto beans

Instructions

  • Saute Bacon and Onion: Set the pressure cooker to saute, once hot, add the olive oil and bacon. Saute for 2-3 minutes.
  • Add onion to pressure cooker and saute for 4 minutes, until translucent.
  • Add Spices and Deglaze the pan: Add garlic and spices, saute for 1 more minute until very fragrant. Deglaze the pot with the water and scrape any browned bits with a wooden implement.
  • Pressure Cook: Add the broth and beans, place the lid on the pressure cooker and cook on high for 45 minutes. Allow the pressure cooker to perform a natural release before opening.
