Tuscan Chicken with Fresh Tomatoes

Ingredients

  • 1 tbsp ghee
  • 2 chicken breasts (boneless and skinless)
  • salt and pepper to taste
  • 1 cup cherry tomatoes
  • 4 cloves garlic
  • ½ onion (diced)
  • ½ cup heavy cream
  • 1 cup chicken broth
  • 1 cup spinach roughly chopped
  • ½ cup parmesan cheese (fresh grated)
  • 1 tsp Italian seasoning
  • 2 tbsp butter
  • ½ tsp red pepper flakes (optional)

Instructions

  • Pre-heat the oven to 400°F

Prepare the Chicken

  • Place the chicken breasts in a sealable plastic bag and flatten using a mallet or similar object.
  • Generously season one side with salt and pepper

Sear the Chicken

  • In a high sided skillet add the ghee and place over medium high heat.
  • Once the ghee is shimmering, place the chicken breasts seasoned side down and season the other side generously with salt and pepper.
  • Flip the chicken once you have achieved a crispy golden brown crust on the first side.

Add the Other Ingredients

  • Add the tomatoes and butter
  • Once the butter has melted, add the garlic and onions and stir for even cooking.
  • Once the garlic is fragrant, add the Italian seasoning and optional red pepper flakes.

Bake the Chicken

  • Place the pan in the oven and bake until the chickens internal temperature has reached 165°F. This step should only take a few minutes.
  • Remove the pan from the oven and place it back on the stove. Remove the chicken to rest on a cutting board and continue in the same pan to make the sauce.

Make the Sauce

  • Add the Chicken broth and scrape any browned bits from the bottom of the pan.
  • Add the cream and grated parmesan cheese, mix frequently and continue to simmer until reduced and thickned.
  • Add the spinach to the sauce and stir until it is wilted and incorporated.

Add the Chicken to the Sauce

  • Slice the rested chicken across the grain into thick slices and place the chicken back into the pan with the creamy sauce.
  • Serve this delicious Tuscan Chicken over fresh pasta or beside a fresh green salad.
