One Pan Tuscan Chicken with Fresh Tomatoes Ingredients

Gather the following ingredients together to make this rich and delicious Tuscan chicken with fresh tomatoes.

  • Chicken Breasts – Boneless and skinless chicken breasts are preferred for this recipe and when possible opt for the free-range and organic.
  • Cherry Tomatoes, Garlic, and Onions – Many Tuscan chicken recipes call for sun-dried tomatoes. My garden’s plentiful tomato harvest has left me seeking ways to use fresh cherry tomatoes. Diced onions and garlic give this dish a ton of flavor.
  • Broth, Cream, and Parmesan Cheese – The base ingredients for the sauce that make it a rich and creamy Tuscan chicken.
  • Salt, Pepper, Italian Seasoning, and Red Pepper Flakes – Seasoning to bring the creamy sauce to life with earthy Italian herbs and a kick of heat with the red pepper flakes.

Creamy One Pan Tuscan Chicken with Fresh Tomatoes Cooking Instructions

This dish is made entirely in one pan, but we will move from the stovetop to the oven and back. Preheat your oven to 400°F.

Prepare the Chicken

Flatten the chicken: Place the chicken breasts in a sealable plastic bag and flatten them with a mallet or similar. Before I owned a mallet I blew off some steam by punching the chicken gently with my fists, but using the bottom of a heavy pan can do the trick too. The goal is to make the chicken breasts uniform in thickness for even cooking.

Season the Chicken: Generously season one side of the chicken breasts with salt and pepper. You can season the other side once they are in the pan.

Sear the Chicken

Heat the Pan: Use a high-sided pan for this that is oven-safe. Place the pan over medium-high heat and add the ghee. Once the ghee is shimmering, we are ready to sear the chicken.

Sear the Chicken: Place the chicken breasts in the heated pan seasoned side down and sear for several minutes until a crispy golden brown crust has formed. Season the top side of the chicken generously with salt and pepper while it is searing.

Flip the Chicken: Flip the chicken to the uncooked side to achieve a similar seared crust that is golden brown.

Add Aromatic Ingredients

Add Butter and Tomatoes: Add the butter to the pan and toss in the cherry tomatoes. The tomatoes are going to break down into the sauce as we cook the dish through the next few steps.

Add Onions, garlic, Italian seasoning, and Red Pepper Flakes: Once the butter has melted, add the onions and garlic. Stir frequently to prevent them from burning. Once the garlic is fragrant and the onions begin to turn translucent, add the Italian seasoning and optional red pepper flakes.

Bake the Tuscan Chicken

Put the Pan in the Oven: Now that the chicken has been seared on both sides and the aromatic ingredients are beginning to cook down for the sauce, place the pan in the preheated oven and bake the Tuscan chicken until the chicken has reached an internal temperature of 165°F.

Depending on the thickness of the chicken and how hot your pan was during the steps leading up to this, it could take just a few minutes or as long as 10 minutes to finish cooking the chicken.

Tip: before putting the chicken in the oven check the internal temperature with an instant-read probe thermometer. This will help you decide how long to put the chicken in the oven for before you check its temperature again.

Make the Sauce

Remove the Chicken to Rest: Remove the chicken from the oven once it has reached the internal temperature of 165°F. The handle for the pan will likely stay very hot through the rest of the cooking process, so be very careful.

Place the chicken breasts on a plate or a cutting-bard and rest them while you make the sauce in the pan on the stove-top.

Deglaze the Pan: With the pan over medium heat, add the chicken broth and scrape any browned bits with a wooden spatula.

Add the Sauce Ingredients: Add the parmesan cheese and heavy cream to the pan stirring frequently until incorporated and simmer to reduce and thicken the sauce. Once it is thick enough to coat the back of a spoon, add in the roughly chopped spinach and stir.

Finish the Dish

Slice the Chicken: Now that our chicken has rested, slice it into thick pieces against the grain of the meat.

Add the Chicken: Add the chicken to the sauce and toss to coat.

Serve: Serve the chicken and Tuscan creamy sauce over fresh-made pasta or beside a leafy green salad.

Many Tuscan chicken recipes call for sun-dried tomatoes. Substitute the fresh tomatoes for sundried or include both types of tomatoes to add even more punch to this recipe.

  • 1 tbsp ghee
  • 2 chicken breasts (boneless and skinless)
  • salt and pepper to taste
  • 1 cup cherry tomatoes
  • 4 cloves garlic
  • ½ onion (diced)
  • ½ cup heavy cream
  • 1 cup chicken broth
  • 1 cup spinach roughly chopped
  • ½ cup parmesan cheese (fresh grated)
  • 1 tsp Italian seasoning
  • 2 tbsp butter
  • ½ tsp red pepper flakes (optional)

Instructions

  • Pre-heat the oven to 400°F

Prepare the Chicken

  • Place the chicken breasts in a sealable plastic bag and flatten using a mallet or similar object.
  • Generously season one side with salt and pepper

Sear the Chicken

  • In a high sided skillet add the ghee and place over medium high heat.
  • Once the ghee is shimmering, place the chicken breasts seasoned side down and season the other side generously with salt and pepper.
  • Flip the chicken once you have achieved a crispy golden brown crust on the first side.

Add the Other Ingredients

  • Add the tomatoes and butter
  • Once the butter has melted, add the garlic and onions and stir for even cooking.
  • Once the garlic is fragrant, add the Italian seasoning and optional red pepper flakes.

Bake the Chicken

  • Place the pan in the oven and bake until the chickens internal temperature has reached 165°F. This step should only take a few minutes.
  • Remove the pan from the oven and place it back on the stove. Remove the chicken to rest on a cutting board and continue in the same pan to make the sauce.

Make the Sauce

  • Add the Chicken broth and scrape any browned bits from the bottom of the pan.
  • Add the cream and grated parmesan cheese, mix frequently and continue to simmer until reduced and thickned.
  • Add the spinach to the sauce and stir until it is wilted and incorporated.

Add the Chicken to the Sauce

  • Slice the rested chicken across the grain into thick slices and place the chicken back into the pan with the creamy sauce.
