Equipment

Ingredients

Wet Ingredients + Yeast

  • 1 c water room-temperature
  • 1 tbsp bread machine yeast
  • 1 tbsp coconut oil softened
  • tbsp molasses
  • tbsp honey

Dry Ingredients

  • ½ tbsp salt
  • ¼ c vital wheat gluten
  • 2 tbsp quinoa
  • 2 tbsp flax seed optional, can use flax seed meal
  • 2 tbsp hemp hearts optional
  • 2 tbsp wheat germ optional
  • 2 tbsp pumpkin seeds
  • 2 tbsp sunflower seeds
  • 2 tbsp quick cooking oats
  • 2 tbsp steel cut oats
  • 1 c all-purpose flour
  • 1-1½ c whole wheat flour use 1 cup; add more as needed

Instructions

  • Add all ingredients to the bread machine pan in the order recommended by your machine. We add the wet ingredients first in the order of the recipe above.
  • Place the pan in the bread machine.
  • Set your bread machine to the whole wheat setting. If your machine doesn't have a specific setting for whole wheat, you can use the basic bread setting. Select the 2lb loaf setting.
  • Check moisture levels: During the first kneading stage, lift the lid and check the moisture level. Add more water or more whole wheat flour 1 tbsp at a time as needed to get a moist ball. Check the moisture level 1-2 more times during this first kneading stage.
Scrape the sides of the bread pan with a silicon spatula as needed.
At the end of this stage, you should have a moist round ball. The bread can be left alone until the bread machine has completed its baking cycle.
  • When the baking cycle is finished, remove the bread from the machine promptly. If it is left to sit in the machine, the bread will get soggy.
    Cool on a drying rack.

Notes

The flax seed, wheat germ, and hemp hearts are optional but add to the flavor and texture of the bread.  Our family doesn't like flax seed, so we tend not to include it. Use what you have on hand and adjust the moisture during the first kneading stage as needed.
