Chocolate Chickpea Muffins with Protein Powder

I love chocolate, and I am always looking for ways to turn something that feels like a treat into something I can actually feel good about eating for breakfast. That is exactly how these chocolate chickpea muffins came together.

I wanted a sweet chocolate muffin that had more protein and fiber than a traditional muffin, but I still wanted it to taste like something I would look forward to eating. Chickpeas give the muffins body and fiber, chocolate protein powder adds an extra protein boost, and chia seeds add even more fiber. I also mix in full-fat Greek yogurt for a little extra protein and moisture.
Then there is the spinach.
I have two teenage boys, so I am almost always looking for easy ways to add more protein and vegetables to the foods they already like. A packed cup of spinach disappears right into the chocolate batter. You cannot taste it, and you cannot taste the chickpeas either. What you get is a soft, rich chocolate muffin with plenty of chocolate chips on top.
These have become the kind of muffin I like to have for breakfast or a quick snack because they satisfy a chocolate craving while still giving me something more filling than a regular muffin.
What Are Chickpea Muffins?
Chickpea muffins use cooked chickpeas in place of much of the flour in a traditional muffin recipe. The chickpeas blend into the batter, so you won’t bite into whole beans or get a strong chickpea flavor.
In these chocolate chickpea muffins, cocoa powder, chocolate protein powder, maple syrup, and chocolate chips do most of the flavor work. The chickpeas provide structure while adding protein and fiber.
Eggs, chickpeas, chia seeds, protein powder, and Greek yogurt create a thick batter that bakes into a soft muffin with a nicely domed top.

Why Make Chocolate Protein Muffins with Chickpeas?
I wanted these to be more than a chocolate muffin with a scoop of protein powder. The goal was to make a breakfast muffin that actually felt substantial.
The combination of chickpeas, eggs, Greek yogurt, chia seeds, and chocolate protein powder gives these muffins protein from several different sources. The chickpeas and chia seeds also add fiber, which makes them more filling.
And because everything goes into a blender, they are surprisingly easy to make. No creaming butter, no separate wet and dry bowls, and no flour all over the counter. Blend the batter, stir in the chocolate chips, fill the muffin cups, and bake.
Can You Taste the Chickpeas or Spinach?
No. At least, we cannot.
Chocolate is a strong flavor, and between the cocoa powder, chocolate protein powder, maple syrup, vanilla, and chocolate chips, the chickpeas and spinach stay very much in the background.
The spinach is optional, so if you do not have any, you can leave it out. I have made these without spinach, and they still come out well. I have also made versions without Greek yogurt, and the recipe is pretty forgiving.
If you are making these for kids who are suspicious of anything green, blend the spinach really well. Once it is fully incorporated into the chocolate batter, no obvious green pieces are left behind.

How to Make Chocolate Chickpea Muffins
These muffins are especially easy because the blender does most of the work.
- Blend all ingredients. Add all the ingredients except the chocolate chips. Blend until smooth.
- Add the chocolate chips. Stir the chocolate chips into the batter by hand.
- Fill the muffin pan. Divide the batter between 12 muffin cups and top each muffin with the more chocolate chips (optional).
- Bake at 350°F for 25 to 27 minutes. The exact baking time will depend on how full your muffin cups are. Let them cool for a few minutes before removing them from the pan.
The batter should be thick but still easy to spoon or pour into the muffin cups. If you use a different protein powder, the consistency may vary slightly.

Tips for the Best Chickpea Muffins
- Blend longer than you think you need to. A completely smooth batter is what keeps these from tasting like chickpeas.
- Drain the chickpeas, but don’t rinse them. A little of the liquid clinging to the chickpeas helps keep the batter from becoming too dry.
- Add some chocolate chips on top. They make the muffins look better and give you a little chocolate in almost every bite.
- Watch the baking time. Smaller muffins may be done around 25 minutes, while fuller muffin cups may need closer to 27 minutes.
Chocolate Chickpea Muffin Variations
The spinach is completely optional. I add it because I am always looking for another way to work vegetables into breakfast, especially with two teenage boys in the house, but the muffins still work without it.
You can also make the muffins without the Greek yogurt. The texture may be a little different, but I have made them that way successfully.
This version doesn’t require oat flour. That is one of the things I like about it. The chickpeas, eggs, chia seeds, and protein powder give the muffins enough structure on their own.
I use chocolate protein powder in this recipe, specifically the Optimum Nutrition Gold Standard whey protein powder. Different protein powders absorb liquid differently, so if you switch brands, watch the batter. It should be thick and pourable, not dry and dough-like.

How Much Protein Is in a Chocolate Chickpea Muffin?
Using the ingredients and protein powder listed in this recipe, each muffin has approximately 202 calories, 10 grams of protein, 21 grams of carbohydrates, 10 grams of fat, and 2 grams of fiber when the batch makes 12 muffins.
The exact nutrition will vary depending on the brands of protein powder, Greek yogurt, chickpeas, and chocolate chips you use, but this gives you a good estimate.
That supports the high protein muffin recipe search intent and answers a question a reader is very likely to have.
How to Store Chocolate Protein Muffins
Let the muffins cool completely before storing them. Keep them in an airtight container in the refrigerator for an easy breakfast or snack during the week.
They can also be frozen. Once cool, place the muffins in a freezer-safe container or bag and freeze individually so you can take out just what you need.
For breakfast, I like them at room temperature or warmed briefly so the chocolate chips soften again.

Chocolate Chickpea Muffins
Ingredients
- 4 large eggs
- ½ cup maple syrup
- 4 tbsp coconut oil softened
- â…“ cup Greek yogurt plain
- 1 cut fresh baby spinach packed
- 1½ tsp vanilla extract
- 6 tbsp cocoa or cacao powder
- ½ cup oat flour
- 2 scoops chocolate protein powder
- 3 tbsp chia seeds
- ½ tsp baking soda
- ¾ tsp salt
- 1 can chickpeas drained
- ½ cup chocolate chips plus more to top
Instructions
- Preheat the oven to 350°F. Line a 12-cup muffin pan with paper liners or lightly grease the cups.
- Mix ingredients: Add all ingredients except the chocolate chips to a high-powered blender in the order your blender recommends, generally with the wet ingredients on the bottom and the dry ingredients on top. Blend until the batter is completely smooth, scraping down the sides as needed.
- Stir in the chocolate chips. Fold in most of the chocolate chips by hand, reserving a few for the tops if you’d like.
- Fill the muffin cups. Divide the batter evenly into a greased 12-cup muffin tin, filling each almost to the top. Sprinkle the remaining chocolate chips on top.
- Bake for 25–27 minutes, or until the tops are set and a toothpick inserted in the center comes out clean. Larger muffins will take longer to bake.
- Cool before serving. Let the muffins cool in the pan for about 10 minutes, then transfer them to a wire rack. They will continue to firm up as they cool.
