What ingredients do we include in our basil pancakes? Of course, there is basil, but cornmeal is another major ingredient. We use a basic healthy cornbread recipe, add more liquid ingredients, and add some basil.

  • Flour – We use all-purpose flour. You can also use wheat flour, but it will make a more dense pancake.
  • Yellow cornmeal
  • Baking powder
  • Baking soda
  • Salt
  • Oat milk – Use any milk you regularly use.
  • Lemon juice – optional, but adds a nice flavor
  • Eggs
  • Honey
  • Olive oil
  • Basil leaves

How to Make Basil Pancakes

These delicious basil pancakes are mostly made just like traditional pancakes, with a fluffy and light texture. But here’s the twist: instead of mixing the ingredients by hand, we use a high-speed blender to ensure a smooth and perfectly blended batter. The result? Pancakes that are not only packed with the fresh flavor of basil but also have a delightfully tender and airy consistency.

Blend All of the Ingredients Together

Combine all the ingredients in a blender, starting with the wet ones. Blend until everything is thoroughly mixed. Using a blender is my preferred method as it effortlessly chops and blends the basil in a single step, resulting in a smoother consistency for the cornmeal.

Cook the Basil Pancakes

To cook the basil pancakes on the stove top, begin by heating up a nonstick pan over medium-high heat. Once the pan is hot, spoon about ¼ cup of your pancake batter into the pan, spreading it out evenly so that it forms a circle.

Yes, the basil pancakes really are green! They do lighten up a bit as they cook, but the basil adds a green tint to the cooked pancake.

Cook for 2-3 minutes until bubbles form on top, then flip your pancake and cook for an additional 1-2 minutes until golden brown on both sides.

We stack the freshly cooked pancakes on a plate next to the pan.

Repeat this process for each pancake you are making. Serve pancakes with your favorite topping such as maple syrup, jam, or whipped cream to complete your perfect breakfast!

Ingredients
 

  • 1 ½ cup flour
  • 1 cup yellow cornmeal
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • ¾ tsp salt
  • 1½ cup oat milk
  • 3 tsp lemon juice
  • 3 eggs
  • ¼ cup honey
  • ¼ cup olive oil
  • 1 cup basil leaves washed

Instructions

  • Add all of the wet ingredients to the blender. Add all of the dry ingredients. Add the basil. Blend the ingredients together.
  • Heat a non-stick pan on the stove. When the pan is hot, spoon about ¼ cup of batter onto the pan. Cook for 2-3 minutes until bubbles form on top, then flip your pancake and cook for an additional 1-2 minutes until golden brown on both sides.
  • Remove the pancake from the pan. Add more batter and cook more pancakes.
  • Serve with your favorite toppings, including syrup.
