I haven’t tested the recipe with turkey bacon or vegan bacon, but I am sure that the cooking times for these would vary. One benefit to using raw pork bacon is during the baking process, the bacon fat is rendered and helps to crisp up the Brussels and infuse them with so much flavor.

Parmesan cheese enriches the final flavor the way only cheese can truly do. Remember, not all Parmesan cheese is equal. When possible, get Parmigiano-Reggiano in a block or wedge, and grate it fresh at home. Buying good quality cheese and grating it freshly at home will give you the best possible flavors and textures in your meal.

Spices are sparse in this dish for the simple fact that the bacon and parmesan bring so much flavor. For this reason, avoid adding any salt and add just a little fresh cracked black pepper. Toss the Brussels sprouts, bacon, cracked black pepper, and olive oil in a bowl to coat. Spread out the bowl’s contents evenly on a large foil-lined baking sheet and bake for 15 minutes at 400°F. With a spatula or tongs rotate everything and bake for another 15 minutes to ensure even cooking.

Ingredients
 

  • 1½ lb brussels sprouts
  • 3 pieces bacon
  • 30 g parmesan
  • 2 tbsp olive oil
  • ½ tsp fresh cracked black pepper

Instructions

  • Pre-heat your oven to 400°F

Prepare the Ingredients

  • Brussels: Cut off the root of the brussels sprouts and peel off the outer leaves exposing the lighter green interior. Divide the brussels in half for smaller sprouts, and in quarters for larger sprouts.
  • Parmasan Cheese: Grate the parmesan cheese and set aside for topping the sprouts at the end.
  • Bacon: Rough chop the bacon pieces into dime-sized pieces

Combine the Ingredients:

  • In a large mixing bowl combine the olive oil, prepared Brussels sprouts, black pepper, and rough chopped bacon. Toss the ingredients to coat and then spread them out on a foil lined baking sheet.

Bake the Brussels Sprouts

  • Put the baking sheet-pan in the oven and roast the Brussels for 15 minutes. After 15 minutes rotate the ingredients for even cooking and bake for another 15 minutes.
  • Top with the grated parmesan cheese and serve hot.
